Cinco de Mayo (Spanish for "fifth of May")celebrates May 5, 1862 when 4,000 Mexican soldiers smashed the French and traitor Mexican army of 8,000 at Puebla, Mexico, 100 miles east of Mexico City. It is celebrated in parts of Mexico and Americans celebrate it for Americans of Mexican descent much like they celebrate St Patricks Day for those of Irish descent
Chilies in Walnut Sauce (Chiles en Nogada) A Classic among Authentic Mexican Recipes
Ingredients
For serving 5
1/2 lb. ground beef or pork 6 large green poblano chiles 1 Tbspoon olive oil 3 cloves garlic, crushed 1/2 onion, sliced 1 apple, chopped 2 Tbspoon blanched almonds, chopped pinch cinnamon pinch nutmeg pinch cumin cilantro, chopped 2 Tbspoon raisins, softened in 1/4 cup warm water 3 eggs, separated 1 Tbspoon flour 2 Tbspoon oil for frying 3/4 cup sour cream 1/2 teaspoon sugar 1/4 cup evaporated milk 1/2 cup walnuts, soaked overnight in water, chopped sprinkling of pomegranate seeds 1 Tbsp salt, or to taste pepper to taste
Directions
Roast chiles until blackened. Let rest for 10 minutes.Remove skins, de-seed and de-vein Warm oil in a skillet (frying pan) over medium heat, add meat and brown. Add the garlic, onion, apple, almonds, spices, raisins, and cilantro. Cook for 7 minutes. Beat egg whites until stiff, sift flour over egg whites and fold in, then fold in beaten egg yolks with a pinch of salt. Warm 2 Tablespoons of oil in a skillet(frying pan) over medium heat. Stuff chiles with meat mixture, dip each stuffed chile in the egg mixture and fry until gold coloured. Whisk sour cream with evaporated milk, add walnuts, sugar, and pour over hot chiles. Sprinkle pomegranate seeds on top.
