Chicken Salad Recipes

Ingredients

2 lbs boneless skinless chicken breast
½ cup diced red onion
½ cup toasted sliced almonds
¾ cup mayonnaise
1 cup diced celery
½ cup chopped raisins soaked for 15 minutes in hot water
1 tbsp dried tarragon
1 tbsp lemon juice
salt and pepper to taste


Directions

Put chicken in a pan and cover completely with water. Bring to the boil over high heat, then reduce heat to medium and simmer for 6 minutes. Remove the pot from the heat and let the chicken steep for an additional 15 minutes. Let the chicken cool and then cut into half inch pieces, or shred into strips.

Add the remaining ingredients to a bowl with the cooled chicken and stir to combine.
