One view is to roast the ribs in an oven at a moderate heat of 355F/Gas 4 for an hour and fifteen minutes to two hours, turning them in their sauce from time to time. Another view is to do it at a very cool heat of 225F/Gas 0.5 for 4 and a half to 5 hours.

It's important to make sure you give your ribs enough time, because cooking ribs over high heat in a short amount of time will not yield the best results. Pre-heat the oven Use at least half a rack of spareribs, or a full rack of baby back ribs, per person. You can use any kind of marinade or sauce you want; use a good barbecue sauce for best results. Marinate overnight.

When done, the meat should almost be falling off the bone, but not quite. You should be able to turn the bone a little in the meat without a lot of effort. If the meat is still firmly attached to the bone, they aren't quite ready. Make sure that your ribs have enough sauce during the entire cooking time, otherwise they may become dry and tough.
